We present a selection of local delicacies:
- 80 dkg liver
- 25 dkg mushrooms
- 2 glasses of water
- 1 small onion
- 5 dkg margarine
- 1 large tablespoon tomato puree
- 10 dkg bacon
- 2 tablespoons flour
Cut the liver into strips, season with salt, add pepper and fry. Dice the onion and fry with bacon, then add the chopped mushrooms, tomato puree, flour and pour cold water. After boiling the sauce season it with salt and pepper and then add greens (chive, parsley). Pour the liver with the sauce and stew it for ten minutes.
We cut and fry in the oil:
- ¾ beetroots,
- ¼ medium cabbage,
- large handful of green beans,
- 2-3 carrots,
- 1 large onion,
- 1 medium leek,
- ½ small celery,
- 2-3 large cloves of garlic.
We fry the mushrooms separately (about 20 – 30 dkg) and season them with 2-3 tablespoons of magi.
We join the mushrooms with the vegetables, then add one teaspoon of sugar, salt, pepper, marjoram, basil (we can also add ginger and nutmeg). After one minute we sprinkle everything with 2-3 tablespoons of flour, stir and fry on about one minute.
We pour the vegetables into the consome prepared before(about 2-3 litres, it can be done from stock cubes). We cook the vegetables until they will be tender and spice them to taste once again. Then we season the whole with ½ glass of milk and cream. The beetroot soup should be thick. To achieve the proper acidity we add citric acid, lemon juice or wine vinegar.
Peel the green mushrooms, rinse in the water, cut into small pieces and cook in 2 litres of water (1,5 hour). Add all the spices and salt to taste. Then season it with flour mixed with cream. At the end pour the chopped parsley.
1.4 kg loin
2 medium onions
3 pieces of pickled cucumbers
10 dkg cheese
15 dkg pork fat
salt and pepper
Cut the loin into slices, smash and add salt and pepper. Spread the diced onion, pork fat, cucumbers and cheese into the broken meat. Wrap them in the shape of the envelope and fry. Then put them into the pot and on the rest of the fat fry the vegetables and mushrooms cut into strips. At the end of cooking add the spices, flour and tomato puree. Fry everything together and pour the sour cream.
